Chef Nishant Choubey, honored as the Independent Chef of the Year 2024 by the Hospitality Horizon Top Chef Awards, has also earned Gold in two prestigious categories,Chef of the Year (Non-Institutional) and Chef of the Year (Progressive) at The Gourmet Fest 2024. With over two decades of culinary excellence, Chef Nishant has become a global culinary icon, celebrated for his innovative approach and commitment to sustainable practices.
A staunch advocate of sustainability and inspired by ancient Ayurveda, Chef Nishant began his illustrious career at the Oberoi Hotel. He honed his skills during a three year tenure at Madinat Jumeirah Dubai, excelling in renowned specialty restaurants such as Pier Chic, Sagreto, and Khayamat. Chef Nishant played a pivotal role in the pre-opening teams for Roseate Hotels (formerly Dusit Devarana) and Olive Bar and Kitchen, setting new benchmarks for culinary excellence. His training at the esteemed John Folse Culinary Institute in Louisiana further reinforced his dedication to sustainable gastronomy.
Under the mentorship of the legendary Padma Shri awardee and food historian Dr. Pushpesh Pant, Chef Nishant has deepened his understanding of culinary traditions. His global influence extends as a consulting chef for Michelin-plated Indus (Bangkok) and collaborations with esteemed establishments such as Sattvik (New Delhi), Seinan Group (Tokyo), Mesa Kitchen and Bar, Nineteen Seventy Eight (Select City Walk, Saket), Cube (Indian Kitchen) in Sydney, Kheer (The Roseate House), Le Mirch (Kuala Lumpur), and Rani (New Jersey). Additionally, he co-founded Street Storyss (Bangalore), a vegetarian craft kitchen celebrated for its innovative and artistic culinary creations.
Currently, Chef Nishant is a consultant for Abhyaranyan, an eco-friendly, 100% certified organic vacation project in Saharanpur, featuring 21 eco-friendly cottages and a farm-to-fork dining concept, with an opening slated for March 2025. This unique project focuses on sustainability, offering a holistic vacation experience centered on organic living.
Chef Nishant’s accolades include winning the Iron Chef Challenge 2018 in Bangkok. His culinary expertise has been showcased through international pop-ups in Japan, Canada, South Africa, Kenya, and Spain, where he demonstrates his mastery of progressive cuisine. He has also shared his passion for preserving regional food traditions at Michigan and Indianapolis Universities in the United States. His culinary talents have graced exclusive dinners, including one for the President of Montenegro and another for Adani, where he integrated Jain philosophy into the menu.
One of his most recent ventures, Tokyo Mitahiwala, has earned widespread acclaim for its innovative approach, solidifying Chef Nishant’s reputation as a visionary in the culinary world. His relentless pursuit of sustainability and culinary innovation continues to inspire new trends and redefine flavors.
